The quests are supposed to be hard, otherwise everyone would complete them. Rewards in any game are given out according to your strength and dedication, which “sifts” the players and gives out rewards accordingly.

You don't think anyone needs to grind, because the quests will inevitably complete themselves.
I would argue the reason we're on pace to reach the stretch goals is because players have been grinding them out.3 -

On top of that, quests that expired days ago are still completing in the background. Yesterday I somehow got credit for one that had me removing 160 red tiles or some number like that. That quest expired 4-5 days ago.

At a brewery. Nothing better to do. There's a Puzzle Gauntlet? Mqy as well grind out some Green Matches. Like a bunch of them.

Today's quandaries. The green match one was easier to finish thanks to the Puzzle Gauntlet, and the nature of some of the nodes there.
Down an enemy 7 times. - 700 Iso
Remove 40 Blue tiles. - 4000 Iso
Remove 60 Blue tiles. - 6000 Iso
Remove 100 Yellow tiles. - 10000 Iso
Make 120 green matches. - 12000 Iso

It is when I am short about 15-20 million Iso to champ my remaining 4-stars, who are fully covered and just waiting in the queue. My 5-stars gradually need the Iso too, the vast majority of which are not champed yet, as I very gradually collect their covers. The quandaries are giving me about enough Iso to level up and champ a 4-star a week. I think this roughly doubles the pace at which I've been champing them.
I'm mostly completing the quandaries doing the fights I was normally going to do anyway, but following them closely lets me play those fights in the proper way to finish the quandary. We have no idea if the ability to complete a previous day's "invisible" quandary is a "bug" that's going to get fixed, or exactly what the nature of it is. Is it only letting you complete the previous day's quandary that you left off at, or is it also cycling up to the next quandary from that day? That's not something I want to rely on, and I also want to get them done as fast as possible. But because I'm posting the quandaries here, it would be possible for someone who hasn't done all the previous days to check to see if they're able to complete an entire previous day's quandaries after they disappear from their screen.

So they’re going to have to add more stretch goals.
So why not just add the remaining Infinity Stones, an elevated 4-star & a ton of shards?

I have almost 15M iso , wish I could exchange it for CP or HP
Which wound suggest I have a problem because I really must finish each quandary even though I don’t need the iso
I am disappointed if I can’t complete one
I’m telling myself it’s for the greater good to help get those goals reached

I also wonder which one is the real world, the forum ranting at every new mode without fail, or the real in-game data.

Today's quandaries. Yikes, the 195 Green match quest from the other day has met its match in Red. Haven't started this one yet. Maybe a Gauntlet node will help pull that one off, if you can stave off damage from the Tug of War tiles while you make reds.
Remove 15 Team-Ups. - 1500 Iso
Down an enemy 14 times. - 1400 Iso
Remove 60 Yellow tiles. - 6000 Iso
Make 75 Red matches. - 7500 Iso
Remove 160 Blue tiles. - 16000 Iso
Make 195 Red matches. - 19500 Iso1 -
I actually found the 3rd support puzzle (Karnak/critical) node was easy to play around in. Bring in America and two characters to get you the red/blue/yellow that you need, and it can get moving fairly easily. The other nodes can be more tricky to guarantee to switch the tug tile, but in this node it’s easy with America to make sure you never get damaged. You might beat the node before you finish the quandry, but you just do it again a few times.

I’ve been using Mags, Sersi, and Nightcrawler. That goes winfinite really fast. Using Storm as a full rainbow to feed my 1>5 Spidey. His powers are surprisingly good at the 5* level.

Here were the quandaries that started Saturday and just ended. 2-star Magneto is a good option to make Match-5s, with his power that turns 3 tiles blue, and you can use a purple feeder like 3-star Scarlet Witch to feed that power:
Make 15 Yellow matches. - 1500 Iso
Remove 40 Red tiles. - 4000 Iso
Remove 60 Purple tiles. - 6000 Iso
Make 35 Match-4 matches. - 3500 Iso
Make 120 Purple matches. - 12000 Iso
Make 65 Match-5 matches. - 6500 Iso1 -
Today we have "make 195 team up matches".
It's doable... But so tedious it's just ridiculous.
Upside, so I'm not being overly negative: I haven't been asked to send/use TUs. ... Please don't get any ideas.

Sunday's line-up. The "Damage" ones appear to be one-match gimmes, so that made today go quicker, up until the last quandary. I'm not sure we've had one requesting to make Team-Up matches before, just to remove Team-Ups. So not sure off the top of my head which characters help with this one:

Still tedious, but the best option I found.
