Among the 3* characters, what's your favorite...:

For me, I'd say:
- Nuke : Human Torch (Fireball)
- AoE : Black Widow (Sniper Rifle)
- AP generator : IM40 (Recharge)
- Shaker : Magneto (his red skill)
- Stealer : Loki (purple passive)
- Defense tile generator : I don't have a favorite. Probably Luke Cage?
- Strike tile generator : Rocket & Groot.

- AoE : Deadpool (Whales!)
- AP generator : IM40 (Recharge) There are other AP generators?
- Shaker : Magneto (Polarizing Force)
- AP Stealer : Loki (Mischief. Is green, btw) Hood is close here. Sorry Star-Lord
- Protect tile generator : Sam Wilson (Bird Strike)
- Strike tile generator : Blade (The Thirst) Hawkeye also looks promising in this department

Nuke: Cyclops (red/black)
AoE: Kamala Khan (green)
AP generator: Scarlet Witch (blue)
Shaker: Storm (yellow/green)
Stealer: Loki (green)
Defense tile generator: Squirrel Girl (yellow) (yes, really--the ability to pass a turn has proven to be useful, at times)
Attach tile generator: Blade (purple)
Strike tile generator: Rocket & Groot (blue)

I'd like to add one more category:

Passive: Doctor Strange (yellow)

(but there's quite a few really good passives in 3* land)

Dormammu

Nuke: Cyclops black w/enough red on the board. It's hard to find 4-stars that provide that level of single-target damage.

AoE: Black Panther black. Its expensive, but its big. Again, this out-performs 4-stars. I like Thor's green, too.

AP generator: Um, IM40 is the best at any star level.

Shaker: I'd like to say Loki but I rarely use him anymore so he can hardly be my favorite. Probably Magneto. Put the two of them together with XFW and look out!
 
Stealer: I guess I don't have one among the 3-stars. I like the Hood but I never use him. Maybe She-Hulk?

Defense tile generator: Luke Cage with his red set at 5

Attack tile generator: You know, I don't really like attack tiles. Iron Fist seems the obvious choice here, but I think Blade makes the nastiest attack tiles out there. (I like strike tile generators a lot more and the 3-star tier has a lot of good ones; Patch is probably my favorite.)

Since he listed R&G as his favourite, and since 3* R&G doesn't make Attack tiles, I'm pretty sure he meant Strike tiles.

- Nuke? Cyclops black. I have fond memories of liquefying other 3*s with it pre-championing.

- AoE? Black Panther. The enemy AP gained is well worth the face-wreckage.

- AP generator? IM40, duh.

- Shaker? Storm. Yellow and green both do lotsa shakin'.

- Stealer? I actually dislike Hood due to his squishiness, and Loki for his can't-do-any-actual-damage-ness. I'ma go with Blade. Only drains one color but deals damage doing it and pretty much locks it out as long as the CD is protected.

- Defense tile generator? Falcon is actually pretty solid for this since his rework. Sprays protects all over and does some AOE doing it. Not bad at all.

- Attack tile generator? Blade again. Those things are Filthy McNasty if you have strikes out.

Nuke - 3Cap's Red, as it's reusable and can overwrite a special tile. Thor's Yellow is a close second because of the huge board shake up that inevitably leads to my favorite Active AoE.

AoE - No love for Quicksilver's passive? You get it just by anyone matching blue! Otherwise, Thor's Green.

AP Generator - Iron Man, with Scarlet Witch getting a distant second place.

Shaker - Beast, as part of 3-star fun team with Black Widow and SW. Her blue tile always makes Beast's green do a big board shake (and lots more damage) for only 9 green AP. Two of those are way better than BW's Sniper Rifle for about the same AP.

Stealer - Yeah, it's Hood. Get some people to tank for him, and it goes a lot better.

Defense - Falcon. The change to Bird Strike made me respec him to 3/5/5.

Strike - Daken. Again, they show up just with normal matches. If we limit it to Active abilities, Patch. There's a reason Patch/Loki is a classic combo.

Attack - Blade.  Really, really nasty with his strike tiles out.

Passive - Flip a coin between Dr Strange and Thanos. They're both so darned good.

- Protect tile generator: Lcap (Blue - I can place them and it's huge!)

- Strike tile generator: There are many choices here. I will say Gamora (in the right team...) 3BE is close too.

Attack/Strike: Blade for the combo!

But the new stealer of choice is 3-"Star" Lord. He steals AP, he steals special tiles, he steals board strategies!
