Classic Legends vs Latest Legends
*Note that I am not much of a PVP player.
I have kind of a weird roster that I am working to revamp because I was trying to limit my roster to a certain number and that's proving to be counter productive and really inhibiting my game play some. With that said I only have 3 2*s champed, Thor, Storm and OBW.
In the 3* range I have 21 characters, all champed except Hawkeye and Scarlet Witch leaving me 22 characters to roster still.
In the 4* range I have 19 characters, none champed, Carol and Peggy are closest with 8 covers each, leaving 30 characters to roster still.
In the 5* range I have 7 covers, and this is where I am torn with what to do. I have Strange with 5 covers at 330, GG with 3 covers at 300 and Thanos at 2 covers at 285. Black Bolt, Black Widow, Iron Man and Jean Grey all with 1 cover at 270. Out of those 4 I use BB the most with his 1 black cover to boost tiles, Iron Man next with his 1 blue cover, then BW and JG next to never.
With that said, are my 1 cover 5*s worth keeping? Should I sell them and use those roster spots to recruit and build up my 3* and 4* roster? My initial thought is yes, because in my reward tree I have 15 3*s available with doubles of Spiderman, Squirrel Girl, Ragnarok and Sam Wilson and 6 4*s available including 2 Blades and soon to be 2 Wasps as well as War Machine and Invisible Woman.

You shouldn't be opening Legendary tokens while you are still building your Three-star roster, plain and simple.
That said, it's a terrible shame to sell off a fivestar cover. Try to hang on to them but don't open any more tokens until you are ready to make the plunge.

That's what's confusing me, what in the 'system' makes that a bad thing to do? BTW, this wouldn't be the first time I've sold off a 5*... I had Steve Rogers, OML and Silver Surfer, all I never used.0

PVE scaling and 5* rarity.
Scaling is based on the levels of your characters. Since you have multiple 5* characters, the game assumes you will be using them, and scales your opponents accordingly.
Unfortunately, most characters aren't very useful until they have at least 10 covers. In theory, this is less true for 5*s, but that's not always the case. So right now, you have underpowered 5*s and the game is feeding you opponents scaled mostly for champed 4*s, of which you have none.
Its hard to do well and win prizes when you're outmatched like that.
Since 5*s are the end game, they are rare. Stupidly rare. You can sell them off, but you will be delaying your long-term progress to 5* land by a year or more if you do so. You may be able to slog through it and keep them, but definitely don't put any more levels on your 5*s.
The characters at the lower levels (3* and even 4*) are soooooo much more common than 5*s that you should almost never throw away a 5* to roster a 4* (definitely not a 3*). You might see a hundred 3* covers or more before you see another 5*. It's throwing away dollar bills to make room for pennies.

And THAT is just the nugget of knowledge that I was looking for. With that said, should I sell off my 1 cover 5*s since they are kinda useless to me as it is? Would that help my scaling at all or just free up slots?

It won't make a difference since the game assumes you will be bringing Doctor Strange, Green Goblin and Thanos to each PvE fight. If you want to lower your scaling, you need to sell them all and thus waste a lot of invested Resources. You have champion threestars, so the effect shouldn't be that noticeable anyway, just stop opening tokens and try to Power through.0

Why lower your scaling when you can pick a lower clearance level? Or just play less in PVP and use your one cover 5* in Story rounds. I wouldn't sell them if I were you.
